Walter Clappis produces this dark, aromatic version from biodynamic vineyards, ageing for a short period in old oak barrels to retain as much fruit character in the final wine. The nose is redolent of fruitcake, spice and all things nice, with a rich, mineral palate laced with silky strawberry and dried fruits.
Deep garnet/purple, the 2012 Cabernet Sauvignon has a nose of fresh blackcurrants, blackberries and black plums with hints of fertile earth, pencil shavings and dried herbs. Medium to full-bodied and a little lean in the mid-palate, it is otherwise fresh and pure, has chewy tannins and a medium to long finish.
